Cucumber Dilly Appetizer
Submitted by Deb Edwards - Market Director
You won’t be able to stop eating this light, refreshing summertime snack. Super easy! The best part is that you can get the cucumbers, dill, and tomatoes from produce vendors at the market!
Ingredients
2 small to medium-sized cucumbers
4 ounces cream cheese, softened to room temperature
2 Tablespoons sour cream (Greek yogurt can be substituted)
1 1/2 Tablespoons fresh dill, finely chopped
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon kosher salt (optional)
(Picture shown with optional toppings: diced tomato and crumbled feta)
Instructions
Peel cucumber leaving some skin on for color. Slice into 1/4 inch slices.
In a small bowl, combine the rest of the ingredients, adding more salt and pepper to taste.
Spoon into a small ziploc bag. Snip the corner off with scissors. Pipe a very small amount on top of each slice. Sprinkle with tomatoes and feta if using.
Chill until serving.
