Rainbow Tomato Tart

For the best flavor, purchase the tomatoes and herbs at the farmers market!

 

Ingredients:

  • 2 lbs mixed tomatoes, sliced into 1/4” rounds (yellow, red, orange, cherry, etc.)

  • Puff pastry (homemade or store-bought for a shortcut)

  • Boursin cheese (room temperature makes for easier spreading)

  • Olive oil

  • Salt + pepper

  • Fresh thyme or basil

Directions:

  • Preheat oven to 400°F.

  • Lay out the sliced tomatoes in a single layer and season both sides with salt. Let them rest for a few minutes to “sweat” out some moisture.

  • Meanwhile, roll out the puff pastry onto your baking pan. Score a border about 1 inch from the edge to create a “picture frame.”

  • Spread the Boursin cheese within the scored area, leaving the outer edge bare for the crust.

  • Pat the tomatoes dry with a clean cloth. Arrange the sliced tomatoes on top of the cheese, then drizzle with olive oil and season with salt and pepper.

  • Bake for 20–30 minutes (or according to package instructions) until the edges are golden and puffed.

  • Remove from the oven and finish with fresh thyme or basil.
